Pretty simple. List your all time favorite guitar solos. They don't have to be regarded as 'the best', they just have to be solos you like for any reason. Here's mine:
Mr. Crowley (Randy Rhoads)
Freewill (Alex Lifeson)
Sultans of Swing (Mark Knopfler)
Diary of a Madman (Randy Rhoads)
One (Kirk Hammett)
Fade to Black (Kirk Hammett)
Crazy Train (Randy Rhoads)
Revelation (Mother Earth) (Randy Rhoads)
Working Man (Live) (Alex Lifeson)
2112 (Alex Lifeson)
Breaking all the Rules (Zakk Wylde)
Suicide Messiah (Zakk Wylde)
Believer (Randy Rhoads)
Hotel California (The Eagles)
Over the Mountain (Randy Rhoads)
Red Barchetta (Alex Lifeson)
That's all I can come up with for now. I'll go listen to some tunes and collect a few more.

I love this call and I stand behind it big time.
Some of my personal favorites :
"Since I've Been Lovin' You" - Led Zeppelin
"Voodoo Child (Slight Return)" - Jimi Hendrix Experience
"Blue Sky" - Allman Brothers Band
As far as my truly, truly favorite solos go - it's gotta be live impromptu jam solos like those from Warren Haynes of Gov't Mule or Jimmy Herring from Widespread Panic. YouTube the video of Dave Matthews Band covering "Cortez the Killer" live in Central Park with Warren Haynes playing lead guitar. Amazing...

I'm no good at mind-cataloguing guitar solos so I'll just second the VU and Funkadelic noms and add those several great ones I remember off of Marquee Moon.

"Highway Star" and "Lazy" would be a couple more. A lot of shit by Blackmore gets overlooked on lists like this.

Both the solo and the outro leads in Comfortably Numb. While not technically mind blowing, they fit the mood of the song perfectly.

I think the best thing about the solo isn't the solo itself, but the fact that Jimmy nailed it on the first take, with a guitar he hadn't even picked up in like 4 years.
