I love watching making of features.
I actually fall asleep to one(or a commentary)every night.
I love the lord of the rings extended version docs(amazing)
Also Star Wars(esp EPI and III) and Castaway.
What are your favorites?

Jurassic park. Even though its an older movie there is a ton of footage from preproduction, production, and post production. Also the original Star Wars and LOTR are good too.

- Zodiac Deciphered: 50 minute making of on director's cut dvd
- the 70 minute making of Dawn of the Dead (original) on the 4-discer
- though unfortunately short (38 minutes altogether), i really like the 2 making-of featurettes for Into The Wild
- Empire of Dreams: making star wars trilogy
- the 90-something minute making of The Third Man on criterion
.........just to name a few

'welcome to the hamster factory.'.Shows just how much of a struggle it was to make this movie.plus it doesn`t have all that back slapping ,he`s a great guy bullshit in the interviews.warts and all filming making.
abyss
making off.covers everything in great details.even going over budget big time and how much of a asshole james cameron can be to crew and actors(but he is a genius so i`ll let him off.)

I was coming just to recommend this very one - This was probably one of the most intriguing making ofs I'd ever seen.

As mentioned above, Dangerous Days is great. It's probably my fave since it deals with the core functions of the film and how they evolved from Hampton Fancher's initial concepts based on the Dick's novel to The Final Cut. Great, consistently detailed look at the creation of probably one of the best films ever.

From Star Wars to Jedi - VHS from back in the late 80s. Very informative with great behind the scenes footage.
Lord of the Rings' "Cameras of Middle Earth"
Beowulf's motion Capture featurette - loved seeing Crispin Glover throwing around rag dolls.
Superman Returns second disc making of feature.
I'll have to check out the Abyss feature tonight.

All the making-of's on the Batman Motion Picture Anthology are great, as well as all the making-of's on the Alien Quadrilogy.
And The Making of Evil Dead II: The Gore The Merrier is just so awesome and funny, especially if you're interested in all the cool monster make-up behind the scenes stuff- and in that vain, the making of The Fly is great too....ah, back in the 80's...when they videotaped everything.
Also I really liked the making of Cape Fear ('91) as well...I've watched it about 3 times.
And who can forget Hearts of Darkness?

The Texas Chainsaw Remake has about an hour 10 or so documentary that goes over EVERYTHING. The pre=production, filming, the mask, the music, the MPAA, everything

30 Days In Hell: The Making of The Devil's Rejects

Williard (remake) one is good. Clocks in around 90 min.
The one on 30 Days Of Night is pretty good. Roughly 60min, with lots of good info.
Even tho most are short, anything Rodriguez (Robert) does it fantastic.
And of course, who can forget (speaking of the above), Full Tilt Boogie. Probably my fave one ever. Oh yea, that would be for From Dusk Till Dawn.

Beside the here already listed titles I love the making off of:
Kingdom of Heaven dir.cut
and 3 making offs, that are partly not included in the usual spec. editions of the movie DVD's
the browncoat DVD about Serenity (Done the Impossible: The Fans' Tale of 'Firefly' and 'Serenity' ) and the specials of the 2-DVD-set
and also on the tv-series box => all together give a great behind-the scene impression
Wraith of Gods = awards winning docu/videodiary DVD of probably the toughest circumstances a movie ever had and the extras on the movie-DVD = Beowulf & Grendel, the 2005 version. The docu shows also a lot of the politics behind the scene...
The big Sharpe movie box (the one that got released around Sharpe's Challenge, not the older colectors box!) includes some of the 'Rifleman Harris videodiaries' and a making off too and the extras on the Challenge DVD => interesting!
Even more complete it gets, if you watch all of the video diaries, in the long version, I think they are ~ 6 or 7 of them. :D

Hehe, fun fact: the director of that documentary (called "The Year of the Rat"), Julie Ng, was a guest lecturer last year in my film class.
Yes, we only get the very best at York!
Nah but still that's kinda cool. I think.

Just the other day I watched the feature-length making of on the Babel 2-disc collector's edition. Very nice; it's extremely informative and well-made and edited; it provides insight on everything from a very in-depth portrayal of the technical execution of each of the film's sequences to interviews with Innaritu explaining the philosophies and ideas behind the film. Very well done.
Also, the making-of film on the Magnolia 2-disc is phenomenal. I really wish PT Anderson would release the making-of footage that was shot on the set of There Will Be Blood.
