The Shining springs to mind immediately. One of the best horror adaptations of one of Stephen King's novels. (Shawshank Redemption holds the King non-horror spot in my list.)
Failing that, The Necronomicon is a crap film but portrays H.P. Lovecraft's stories well. The Re-Animator is good, but strayed too far from the original Lovecraft story, IMHO.

Rosemary's Baby-I think the Polanski directed movie came close to the book by Ira Levin.

I was going to mention 'The Shawshnak Redemption' but I was beaten to it. I may be in a minority with this one but I thought that Pet Sematary was a great adaptation of the book, which I actually didn't care for all that much. American Psycho, I think also did the book justice. It missed out on a lot of stuff but I also think some of the stuff it skipped, maybe wouldn't have worked in he movie, such as some of the extreme gore.

The Exorcist & Jaws are two great examples. I also like most Stephen King adaptions,(Pet Semetary,Carrie,The Night Flier,Christine,Green Mile,Shawshank Redemption,Salems Lot,Stand By Me,Firestarter,Dead Zone, Apt Pupil).

Yes King actually does have a lot of good Book tp Movie translations. Probably because the source material for the films is so strong

i think all of kings non-horror books come out well, re green mile, stand by me et al, but his horror adaptations suck. ever see the stand?
i think fight club stands well asa good adaptation.
bram stokers dracula was very good. better than the book i reckon, cos the book is difficult to read the way its set up.
and lets not forget hellraiser
