Jack and Walter. I know you can't list all, but two more I enjoyed was Lemmon and Curtis in Some Like it Hot and Steve Martin and John Candy in Planes, Trains and Automobiles.

Hard to say, but I'd say it's between the Pacino/DeNiro connection, the Lemmon/Matthau partnership, and the Hopkins/Foster chemistry.

I must say I'm pretty shocked that the famous Newman/Redford duo isn't on there.

But I'll say the best is Travolta/Jackson in Pulp Fiction.

Though I feel "Heat" is an overrated movie, it's worth a viewing just to see De Niro and Pacino's acting. Epecially the diner scene.
