*ahem* Gone With the Wind is the only one I've seen so far so it wins by default! Surely not his best though--the film is good, but too flawed to be regarded as a classic (I've explained why in other posts, do a search if you're curious).

According to Huston's book, he was really proud of his work in The Misfits, and I've always thought it was his best performance.

He was fun to watch in most of his films, I would single out Mogambo (Ava at her finest, which is quite saying something) and a little seen one that shows up on TCM sometimes called The Hucksters.
