BTW Ric Shaw, if you love Kubrick you must check out Barry Lyndon post haste, I think it's definetly his most underrated, and one of the most underrated of all-time. It's one of my personal faves and is one of the best looking films ever made.

Haven't yet seen THE DEAD, UNDER THE VOLCANO, ANNIE, THE MACKINTOSH MAN, THE MAN WHO WOULD BE KING, THE LIFE & TIMES OF JUDGE ROY BEAN, FAT CITY, REFLECTIONS IN A GOLDEN EYE, CASINO ROYALE, the original MOULIN ROUGE, MOBY DICK, THE AFRICAN QUEEN or THE TREASURE OF SIERRA MADRE. I have no intention of ruining my Huston report card with THE BIBLE or PHOBIA (his one attempt as a horror filmmaker). Any recommendations aside from the usual AFRICAN/MADRE duo?
Although he has only directed three films, Quentin Tarantino has a high average from me as well:

Quentin makes a good point about Terrence Malick. I mean, he's made three brilliant movies (10/10 for Badlands and Days of Heaven, 9/10 for The Thin Red Line, IMO), which averages out to 9.67/10. I can't see any director having a higher average than that.
That said, I wouldn't put him at the top of my list for Greatest Directors Ever. I mean, he's only made three movies...

Martin Scorsese has an average rating of about 9.7.
Quentin Tarantino has an average of about 9.6.

I think part of the reason Malick's films are so good is that he works like Kubrick and spends a very, very, very long time on each picture. He seems to be a perfectionist and wants his films to reflect that, something which they do. But I agree because he has only made 3 pictures, I couldn't put him up there with equally great but more prolific directors.
Tarantino for me scores the same as Malick does for Nate, 9/10 for Reservoir Dogs, 10/10 for Pulp and Jackie, assuming Kill Bill keeps that track record (and I think it will) he could be second place. Though for a title like this, I do think it would mostly just fall under directors who have only made a few films (or who you've only seen a few select films from) because when one has the output of a Scorsese or Lee or Allen, or even a flick every 5 years, they're bound to put out a "merely" good movie at least once.

Stanley Kubrick, for me, of course.
His highest film, 2001: A Space Odyssey, gets a 10/10 from me. All of his other films, with the exception of Barry Lyndon, either get 10's or 9's.
Peter Jackson is another director who is high on my list. There's not a single one of his films that I've hated, and all rate at least an 8 or more.
Quentin Tarantino and P.T. Anderson are two more directors, each whose films I love dearly and find no place in my heart to hate.

Probably Wong Kar-wai, even As Tears Go By, which many WKW fans isn't really a WKW film, which I think is bull. I loved every film he has done.
P.T. Anderson and Quentin Tarintino, but they haven't made alot of films.
I wish I could say Zhang Yimou, I nearly loved all his work too, except for Keep Cool (7/10) and Not One Less (6/10)

1. Akira Kurosawa (9.0 average, from what I have seen of his)
2. (tie) Stanley Kubrick & Alfred Hitchcock, each with an 8.6 average
3. Billy Wilder (8.15 average)
Technically, Spike Joze (9 average), Quentin Tarantino (9 average), and Terrence Malick (9.3 average) have higher averages than them, but they've only made 2 or 3 movies each so I didn't include them.

I haven't given anything lower than an 8 to any Wilder, Tarantino, or Kurosawa film.
Woody Allen and Akira Kurosawa both average well over a 8.

Stanley Kubrick, Billy Wilder, John Huston, Orson Welles and all get about a 9/10 average from me.
And I don't think it's really fair to count him since I've only seen about 7 films of his or so, but from the ones I've seen from master Ingmar Bergman, all of them get a 9/10 or above from me, with one movie (Wild Strawberries) in my top 10, one (Persona) in my top 30, and another (The Seventh Seal) in my top 50 (yes, I did some brief editing to my top 100 quite a couple of times).
