I LOVE the Goodwill Hunting 2: Hunting Season parody in Jay and Silent Bob Strike Back.

I don't know if this qualifies, but I love the part in Indiana Jones and the Last Crusade where Indie sees the picture of the the Ark on the wall and is questioned about whether he's sure that's what it is... /ubb/smile.gif That was a clever little addition.

Oh yeah and did you realize in INDIANA JONES AND THE TEMPLE OF DOOM the name of the restaurant of the opening scene? "Club Obi-Wan"...

Almost everything from "Spaceballs". For instance, instead of a hairy beast called Chewbacca or "Chewie", you have a "Mog" called "Barf".
Bill Pulman (alias Lonestar) calls for Barf:
"BARF!!!! BAAAAAAARFF!!!!"
He says it in a way that it looks just like he's throwing up or something, very funny.
What I also liked was the little parody on Planet of the Apes at the end of "Spaceballs":
(Ape 1) "What are those things coming out of her nose (of the Statue of Liberty)?" (Ape 2) "It looks like humans?!" (Ape 1) "Oh shit, there goes the planet!!!!!"
