Some must see martial arts films are:
Anything directed by Tsui Hark eg: ONCE UPON A TIME IN CHINA, BLADE (not with Snipes) etc.
Jet Li in FIST OF LEGEND, HITMAN, SHAOLIN TEMPLE etc
Jackie Chan in DRUNKEN MASTER, RUMBLE IN THE BRONX etc
STORMRIDERS and A MAN CALLED HERO (Crouching Tiger comic book style action)
Bruce Lee in ENTER THE DRAGON, THE BIG BOSS, GAME OF DEATH etc
Sonny Chiba in the real STREETFIGHTER series
plus tons more but these will get you started.
The one bit of advice for someone new to the genre is "never watch US kung Fu films".
Ive been a martial arts fan all my life and none hold a candle to the Asian efforts.

I too am a die hard hk cinema fan, especially the wu xia kung fu genre.
and yes, i totally agree that U.S. action films "can't hold a candle" to their chinese counterparts. too much reliance on guns...we've seen a real heavy decline in american action heros. where are the stallones, arnies, segals, etc. now?
well the likes of jackie and jet li are finally getting some deserved spotlight and movie goers are loving it.
people are also now discovering their older movies and with enough digging can find some real gems.
jet li and jackie chan started it all for me, oh and can't forget bruce! i recomend the once upon a time in china series, tai chi master (twin warriors) & iron monkey among many others.
Oh and if you are into kung fu they are releasing IRON MONKEY in theaters real soon! One of the best ever made for the genre. And please get past the name! it is just a literal translation. don't be so quick to judge.

Iron Monkey: October 6th!!!
Check out the website, http://www.iron-monkey.com , recently updated and looks to be expanding...
Sample excerpt from website:
IRON MONKEY weaves fact and legend in the tale of a daring thief who uses his ill-gotten gains to aid the poor and dispossessed. When the local governor blackmails a renowned kung fu master into catching the thief by threatening the master's son, the stage is set for danger, conflicted loyalties, and some of the most breathtaking action sequences ever filmed. Directed and choreographed by Yuen Wo Ping, the masterful action choreographer behind THE MATRIX and CROUCHING TIGER, HIDDEN DRAGON, IRON MONKEY is one of the best-loved kung fu movies of all time.
For IRON MONKEY, Yuen Wo Ping undoubtedly drew on his own memories of watching his father at work as action choreographer on Hong Kong's long-running Wong Fei Hung series in the 1950s. Yuen has kept the family tradition alive by becoming one of the hottest action directors in Hong Kong, and now the world. IRON MONKEY, produced and written by ace filmmaker Tsui Hark, is a virtually flawless showcase of "old school" kung fu skills, made with a stunning cinematic grace that prefigures CROUCHING TIGER, HIDDEN DRAGON.
Donnie Yen stars as Wong Kei Ying, a master of Hung Gar style boxing who lived in the mid-1800s. His son, Wong Fei Hung, was one of the most famous martial artists in China. Movies, books, and even operas have elaborated on this story for Chinese audiences over the past hundred years. Both Wong Kei Ying and his son are legendary heroes.
IRON MONKEY, the chronicle of a mythical episode in the younger Wong's childhood, imagines how this father/son bond would be tested if Wong Kei Ying were forced to use his kung fu against equally skilled and deadly foes to protect his son. His only allies are the kindly Dr. Yang (Yu Rong Guang) and his assistant Orchid (Jean Wang), who have secrets of their own to protect. The epic final battle, with the combatants balancing on flaming poles, will serve to remind viewers of the reason why Hong Kong movies are the best action movies in the world.
