God, no kidding. Considering the fact that it's fucking Kubrick, you think they could've bothered to put a little more effort into it.
As others have said, the Alien Quadrilogy is perfection of the art of DVD. I have watched every documentary and every extended cut, have heard every commentary, and they were all worth it. Even though I couldn't stand Alien 3, the documentaries behind it were interesting enough to make it worthwhile.
The Lord of the Rings extended versions are also fantastic.

The ones in my collection:
Spartacus (It has two different commentaries, a good amount of documentary and despite being over 3 hours long the entire movie is on one single disc. Impressive considering stuff when you consider the treatment most Kubrick DVDs get).
Brazil
Once Upon A Time In The West
The Adventures Of Antoine Doinel Box Set
The Alien Quadrilogy Box Set
Pretty much every Troma disc I own (Citizen Toxie is tops thought)
Se7en
The Terminator (despite the lack of commentary)
Killer Klowns From Outer Space
John Carpenter's The Thing (natch)
The Day The Earth Stood Still
Basket Case
