I really want to get into the Evil Dead series
Tell me which two 2 buy and what edition and why?

Well, if you want to get into "Elite Collector" Mode, I suggest you buy the first Evil Dead in it's foam Book of the Dead edition, as shown here:

Then, I would go with Evil Dead 2: Special Edition, as seen here:

Try looking for the tin case. A true collector's item.
About a year ago they unleashed the Army of Darkness Boomstick Edition which comes with 15 minutes of never before seen footage that's been added to the final cut. I'd get that.

if you can play region 2 discs, you could try and get the 4 disc trilogy box set, it has most of the extras from previous releases

Well, The Book Of The Dead has the movie in widescreen(1.85:1) which is not the original aspect ratio. If you want the movie in the OAR which is fullframe, go for the Elite Entertainment disc. But if you can play R2 discs then get the 4-disc set, since it has both the widescreen and original fullframe editions in it. Hope that clarified things. Also, I get a strange feeling of deja vu as if I've written this sometime before...

I had read sonmewhere that as far as picture ratio and quality goes, the elite transfer is the better of the two...still I enjoy the Book edition because of the sweet extras!
Bruce Campbells "Fanalysis" is a very entertaining look at the fans from the perspective of the actor.
Bruce is very funny and quite the genuine article.

If you buy Army of Darkness, get the DVD so you'll have the original ending (that Raimi and Campbell prefered but was changed because Paramount found it too depressing).
