Someone please explain the switch of the satellite images of Bahamas and
China. I know that it was so he could have an excuse for the $282K, but why
did he turn the confidential folder back in with the image from Bahamas?

I figured it was to try and fool those guys, although it didn't work out in the end. Because he planned on keeping the map of China and was going to return the file. Thats what I thought of it.

I think the idea was that he wanted the image of China (as part of the rescue), but he didn't want his superiors to know what he was up to until he was done. The pictures of China and the Bahamas were rather similar, so maybe he was hoping they wouldn't realize they had the wrong picture and wonder where the right one went...

kind of a spoiler i guess

What was the significance of "Dinner Out" to Brad Pitt and Robert Redford. I guess I missed what it meant to Pitt and Redford's character except that that was the name of the operation.

Operation Dinner is mentioned during the breakfast scene in Beirut (the one they have to go through the gun-riddled alley to get to). Pitt gives him the gift (a flask, I think), and explains that he got it from london, through an operation DINNER OUT.
