His performance as Hannibal Lector in The Silence of the Lambs is not only his greatest performances, but the greatest performances of the 1990s. Outstanding acting.
Your list is missing his excellent performance from Hearts in Atlantis.

The only Hopkins performance I enjoyed is in Richard Attenboroughs MAGIC(1978).- the rest of the time he is to much of a ham for my taste.

Yeah, Silence of the Lambs.
Don't forget Hopkins's fabulous turn as John Quincy Adams in Amistad.

Secret agent Philip Calvert in Alistair MacLean's WHEN EIGHT BELLS TOLL from 1969. Amazing to see Sir Tony running about in a wetsuit killing assorted baddies in this tough Bond-style thriller about shipwreckers off the West Coast of Scotland.

Obviously, his best and most memorable role is Hannibal Lecter in Silence of the Lambs. His return to the role in Hannibal was pretty good too; I thought he was a bit weak in Red Dragon.
Also liked him in Bram Stoker's Dracula, Remains of the Day, and Mask of Zorro.

The Remains of the Day
Yup. Silence is his most iconic performance, but he is much better in Remains of The Day (his best) and Nixon.
