Any big effects action movie or epic is usually pretty impressive with a good surround setup.

I've only had my surround sound for like a month, but the best sounding DVD I've played so far was Pulp Fiction CE.
Darkness Falls actually sounded really good too. Cheap scares.

Any sci-fi or epic movie is pretty good, like the Star Wars flicks or Gladiator or Braveheart.
-I did watch Unforgiven the other day with surround sound and it was pretty cool too - but I'm biased.

Any DVD that has DTS. Pixar flicks sound great too. While I was watching Shaun Of The Dead I had to pause it a couple of times because I kept hearing things. It was the movie, that was great sound!
A movie to watch out for is The Terminator. I found the Surround mix to be terrible.

Like APZombie, for me the best one so far out of all the dvds I have is Master and Commander: Collector's Edition in DTS. We just got a sweeet upgraded sound system and so I was testing out all my dvds the other day - this movie is 10x better with the DTS soundtrack. During the quieter scenes, you actually feel like you're on a boat - (ie -the dialogue sounds a bit different when they're inside the boat, on the deck, or on an island, there's creaking sounds all over the place and just a hollow sound that really makes you feel like you're there). The "man overboard" scene feels like you're being swamped with waves, literally. The waves come from all over the place. When the music's playing, it's not too intrusive either.
But the best are the two major battle scenes. My god. Cannon sounds flying from front to back and back to front from left to right with the subwoofer rumbling perfectly, shots fired all over the place from left front to center to right front, people yelling all over the place in the different speakers, tons of atmospheric sounds layered perfectly and you can hear everything crystal clear.
I seriously doubt there's a better dvd out there for sound yet that I've heard. I mean, there's a reason why it won best sound editing and got nom'd for best sound. I've checked out the (new) Star Wars movies and I still feel they're a bit too schizophrenicly mixed (though they are very very good in terms of sound mixing compared to everything else). Return of the King is probably the closest contender out of the dvds I own - the Battle at Pelennor Fields with the elephants is awesome.
Some of the other ones I checked out in my collection ->
Collateral (DTS) has some aggressive sound mixing more towards the latter half but is very good of atmospherically.
Spider-Man 2 I found to be a bit dull and not aggressive enough but there is one scene that is incredible - the Doc Ock in the hospital room scene is fantastic.
Almost Famous also makes quite good use of its DTS soundtrack...the concert scenes are pretty great.
I only briefly listened to Moulin Rouge's but I found it just a bit too much of a mishmash still, just a tad.
I checked out many more but of all the ones I checked out, the most disappointing was for The Pianist. I found the DTS and Dolby Digital 5.1soundtrack to be really frontloaded and dull (*I have the Canadian version of the DVD however so it could possibly be a different mix from the American one)

I love Dolby Digital. My relatives don't understand surround sound / Dolby Digital . I have hooked up their systems, but they don't want to spend the extra $20-25 for a digital optical cable. I told them about it but they just brush it off, so I stop telling them.
I have my Direct TV receiver and my dvd player setup that way.
I have a really nice size room and the sound just goes around really nice.
My first dvd was THE PATRIOT - with Mel Gibson.
That movie was my Show and Tell dvd when my family and friends came over to see my setup. The shooting in that movie really makes you feel like you are right there.

Believe it or not... Batman & Robin. The only good thing about it is the sound mix.

No surround sound for me.
But I can imagine 2001: A Space Odyssey would be pretty frickin' sweet.

I use Terminator 3 to set up anyone's sound system, because the crane chase has plenty of loud surround sound and dialogue mixed in.
My experience has shown most 5.1 systems have their preset levels all fucked up. On mine all 6 channels were set at their maximum level, which meant the center channel got blown away by all the sound FX and you couldn't hear shit. I had to crank the other levels way down to get a good balance, but once I did, it was great.
Especially for Pirates of the Caribbean - not only is it loud and bombastic, but it's also got this awesome low rumble to it. The music score is fantastic in 5.1.

Though I didn't care that much for the movie Hero did sound great on Surround Sound. Really any scene with rain or water drops of some sort are cool.
Pirates of the Carribean was cool.
I haven't put Black Hawk Down in yet, but I need too soon.
Saving Private Ryan or as others have mentioned Master and Commander are probably the best I've heard so far. I've only had my system for a couple months though.

All the abovementioned action movies are great with surround sound...but for a more subtle feel, Snow Falling on Cedars is a great flick to watch with the lights out and the volume up.

Starship Troopers is great with all the bugs and guts and stuff flying around. Also The Mummy is great, especially with the locusts in complete DTS.
I Robot, Minority Report and Die Another Day are wicked too!

LOTR EE Trilogy with DTS-ES (if you have your system set up for 6.1 discrete) is second to none,
Gladiator DTS-ES
Blade 2 DTS-ES
Spiderman & Spiderman 2 Superbit DTS
Airforce One Superbit DTS
Fighter in the Wind DTS
Throw Down DTS
Saving Private Ryan DTS
House of Flying Daggers SE DTS-ES
Hero DTS-ES
For an opening sequence and if you pump up your system really loud the Swordfish opening scene is one of the best sounding intros on a dolby track I've heard.
