My favourites:
North by North West
Seven Samurai
Crouching Tiger Hidden Dragon
The Great Escape
Deliverance
Goldfinger
The Princess Bride
Raiders of the Lost Ark
The Man who Would be King(starring Connery and Caine,i'm surprised it's not better known)
The Crimson Pirate
The Adventures of Robin Hood
I think these can all be called adventure films.Not sure of a suitable definition.Perhaps Apocalypse Now,Treasure of the Sierra Madre and historical epics(El Cid i like)might qualify.It's a genre Hollywood has certainly dominated.

It is tricky to define what would represent an "Adventure" film; most now are action shoot-'em-ups. Anyway, mine would be (in no order):
"Raiders of the Lost Ark"
"The Lord of the Rings: The Fellowship of the Ring"
"Planet of the Apes" (1968)
"Lawrence of Arabia"
"Star Wars" (and all the prequels/sequels)
"Jurassic Park"
"The Last of the Mohicans" (1992)
"The Princess Bride" (good call on this one)
That's it for me. Unfortunately, I haven't seen nearly any of the classics you have on their. It really depends on what you would consider adventure. I would put "Goldfinger" more in the company of contemporary action films (like "Lethal Weapon" and "Speed") than with "Raiders of the Lost Ark," while "North By Northwest" is pure thriller for me. As for "Crouching Tiger, Hidden Dragon," I find that is in a class by itself; it doesn't fit what I would consider adventure, and yet it does.

The best pure-adventure movie is, beyond any shadow of a doubt, Raiders of the Lost Ark. I consider the Star Wars movies more of a sci-fi/adventure mix, but if they were to count, I'd have to say The Empire Strikes Back is the best...

JAWS, THE POSEIDON ADVENTURE and the INDIANA JONES trilogy.

I should add Hidden Fortress(Kurosawa); extremely involving,with superb widescreen compositions,and a major influence on Star Wars-two bumbling,slightly comic characters and a feisty princess in danger.Starring the great Toshiro Mifune.
Also,Aguirre Wrath of God(Herzog);a mesmerising,extraordinary Peruvian adventure,with Spanish conquistadors on obsessive quest for El Dorado,through mountains and along the mighty Amazon.A treat for the armchair traveller!

The first movie I thought of....
RAIDERS OF THE LOST ARK
Indiana Jones and the Last Crusade is the best, edging out Raiders of the Lost Ark.
Other great adventures include the brilliant The Killing Fields, Indiana Jones and the Temple of Doom, The Mummy, Jurassic Park, and the little seen but terrific The Mosquito Coast.
