What are your top 10 anime series? I noticed there's no real "top 10" thread in this board (not sure the "10" thread was about this) so, let's hear some lists.
I'll post mine, without any particular order:

Tough because at the time I watched certain shows (like Dragonball) I really loved them but I don't know if they're as enjoyable today. But based on the time I saw them, I'd say these are the 10 that I enjoyed the most (obviously in no order):
Dragonball Z
Trigun
Cowboy Bebop
Rurouni Kenshin Trust and Betrayal - the series was a little too corny for me, but this was probably the best anime I've ever seen

To be perfectly honest, given my current cable options (that being, no channels with any real anime other than the almighty CN), I'm only able to really get anime in bits and pieces, other then Evangelion, which I bought (and the movie).
*= Technically not Japanese Anime, but such high quality that I'm compelled to include it

First off, Avatar is awesome. Too childish, I agree, but children's action cartoons have come a long way from my childhood, which wasn't even that long ago, like the Xmen cartoon of the early 90's where they keep saying "destroy" because they can't say "kill" or "death." If you compare it to action cartoons from before that... well, I think you see my point.
And having Cartoon Network is great for anime in my opinion. Most of my favorite shows have aired on Cartoon Network at one time or another and they keep mixing it up. Plus, English voice dubbing is a whole lot better than it used to be, and censorship is being limited. It's a great place to start

Completely agree with you Mdpuff. I can remember reading a bunch of anime reviews where the biggest criticisms came from the English Dub. I think companies are starting to get that "cartoons" require just as much acting skill as big live action shows like Lost. The actors are all probably starting to become more in tune with VO skills as well. Although, i must say, the English dub for Neon genesis Evangelion is by far one of the best I've heard (as is the overall English direction by ADV).

I kind of thought Death Note lost its way. The most interesting aspect of it, to me, was the "right to judge" thing, and whether or not Light was right in punishing criminals. It peaked when the lines of good and evil were still blurry, and you could relate to both sides. I thought Light lost his way and got drunk with power way too quickly, and then it kind of became too much like Detective Conan, just with a continuous, more mature story. Still interesting, but definitely not as thought-provoking or groundbreaking as I thought it was going to be after the first 4 or 5 episodes.

Just finished and I do agree with what you said.

I can never make a list of best anything (movies, anime, video games, etc.) because I can never compare between genres. How can you compare the mystery and plot twists of Death Note to the insanity of Full Metal Panic? So, I don't have favorites.

Depends on what kind of mood I'm in, I guess... They try to do VERY different things, so it's so hard to compare. All I can say is this:
If you haven't seen Wolf's Rain or Berserk, see them... Now. Those are the only 2 shows that transcend genre barriers in my mind. They accomplish what they set out to accomplish, do so virtually perfectly, and even add some solid balance. They're both constructed flawlessly: great pacing, good exposition, and very powerful (albeit confusing) conclusions. The characters are diverse, and quite frankly perfect for the mood and story (there will never be a better antagonist than Griffith... period). They both are very thought provoking and have powerful messages, but those elements never seem to weigh down or overcomplicate the shows, as they never come off as preachy. The remainder of a top 10, or even a top 5 for that matter, will probably change depending on the day of the week and what mood I'm in. But Berserk and Wolf's Rain stand alone.
