I've recently been trying to get into Jim Jarmusch. So far I've seen 4 of his movies: Stranger Than Paradise, Down by Law, Dead Man, and Coffee and Cigarettes, so I'm probably not qualified enough to vote in this poll, but so far my favorite is Coffee and Cigarettes (especially the segments involving Iggy Pop and Tom Waits, Cate Blanchett's amazing double role, and Alfred Molina and Steve Coogan), with Down by Law coming in second. I don't exactly consider him to be one of the best directors around, but he's certainly one of the most interesting. I can't wait to see Broken Flowers.

Ghost Dog
One of my 10 favorite films of all-time.
3 way tie between Down By Law, Mystery Train and Night on Earth.
Probably 3 of thee most underrated movies of all time.
Down By Law gets my vote

My favorite is definitely Night on Earth. It's rare to find a segmented film where each of the storylines work as their own short film without feeling padded.
Dead Man is a close second.

Ghost Dog. Everything about that film, from his interactions with the little girl and the French guy in the ice cream truck ("He's your best friend?") to his homages to Branded to Kill, is just perfect.
I also quite like Night on Earth, especially the New York segment with Esposito and Mueller-Stahl ("Yes, is good. Fresh. Fresh head.") and the Paris one, with the cheerfully insane Beatrice Dalle and that same guy from the ice cream truck.
Mystery Train is terrific as well.
"Danger Will Robinson! Danger!"
"Shut the fuck up."
I also love Jim's brilliant cameo in Sling Blade "Y'all got french fried potaters in there?" Doesn't bat an eye
