I'm pretty sure the From Dusk til Dawn DVD has an extensive "Making of" feature on it.

Requiem for a Dream has a pretty long "Making Of". It was interesting to see how they did all the cinematography.

Do The Right Thing has a 50 or 60 min "Making Of" on the Criterion Edition, but I haven't gotten the chance to watch it yet.

King Kong (1933) 2-Disc = 2.5hr documentary, from start to finish to legacy, with good interviews as well.......and as were on Warner Bros. discs: excellent, 1hour or longer making-of docs can be found on (at least what i have) The Adventures of Robin Hood 2-disc, and The Wizard of Oz 3-disc.....

King Kong (2005) 3-Disc Extended Edition: Massive 3 + hour making of documentary, haven't even finished it yet...

Dawn of the Dead 4-Disc Ultimate Edition: One of my favorite making-of documentaries, "The Dead Will Walk," roughly an hour long

The Exorcist: "Fear of God: The Making of the Exorcist" documentary

Planet of the Apes (1968) 2-Disc: "Behind the Planet of the Apes", 2-hour long doc on everything Apes, start to finish

off the top of my head these are the few i can really think of...

Dimension Collector's Series of Dusk Till Dawn is Great. Not only does it have Full-Tilt Boogie (which is one of the best behind the scenes ever, a movie in its self) it has tons of other extras.

Music video's from Tito & Tarantula's and ZZ. Outtakes and a whole lot of other shit.

The xtras from this are good enough to buy in their own.

Superman Returns' "Requiem for Krypton: The Making of Superman Returns" is almost 3 HOURS!

One of my favourite documentaries that came as an extra to a particular movie was the documentary on John C. Holmes "Wadd - the life and times of John C. Holmes" it came with the movie Wonderland....Wonderland was fucking terrible...but getting Wadd with it was worth the near $40.00 spent on it. I'd have bought the documentary on it's own....it definitely gave more of an insight into the person than the movie did.
